Take a big breath, stretch out your arms, and let out a big sigh of relief that it’s officially 2014. We’ve pushed through another term and another year, friends! Congrats! With all the holidays, final exams, get-togethers, shopping, and celebrating, I know at least I was ready to just get back to a calmer schedule. I actually found myself to be quite excited to head back to another term at WOU!
Since it is January, I figured it would be a perfect time to post another delicious, healthy recipe. A new year means a better you! Even if you don’t really do the whole resolution bit, it’s never a bad time to start making better decisions. One of the best decisions you can make to be a better person is to eat healthier! Every meal is a chance to build a healthy body.
The recipe I’m sharing with you today makes my mouth water just thinking about it. It’s so delicious and super, super easy that you’ll wonder why you’d ever eat the other stuff from the store! And when you try them, you’d NEVER guess what the main ingredient is!
Gluten-free/Dairy-free/Egg-free, No added refined sugar or butter
Black Bean Brownies
1 (15 oz) Can Black beans
1/2 cup rolled oats
1/4 cup honey
1/4 cup coconut oil
3 TBSP 100% cacao unsweetened cocoa powder
30 drops liquid stevia
1 tsp baking powder
Rise black beans in water. Place all ingredients directly into blender. Blend until mostly smooth. If it’s too thick to blend, add 1 TBSP of water. Pour into 8×8 nonstick pan and sprinkle semisweet chocolate chips on top (optional). Bake at 350 degrees for 20 minutes. Let cool before cutting into 12 squares.
